
As I mentioned before … I’ve got a special book about pasta: Vincenzo Buonassisi’s pasta cookbook (published in the 70s) with lots of pasta recipes. It’s a cookbook without any photos & the recipes are short – reduced to the essentials. Nevertheless it’s a treasury of ideas how to prepare pasta adding vegetables, meat, fish and seafood …
When roaming the book … I got intrigued by a simple approach to spaghetti with tomato sauce and mozzarella. So I started … and a light spaghetti dish with a fruity sauce was created in very short time.

What do we need:
- spaghetti
- peeled tomatoes
- fresh herbs
- garlic
- ground chilli powder
- butter
- mozzarella di buffalo.
It’s quick & easy preparation of the spaghetti dish. In short: while cooking the pasta you may prepare the tomato sauce. Because of the fresh herbs as well as the garlic and the chilli you’ll get a very fresh sauce with a spicy edge. (The amounts of garlic & chilli are up to you … add as much as you like.) The mozzarella is just the final touch caring for more creaminess of the sauce.

- 150 g spaghetti
- 1 packet fresh parsley
- 1 packet fresh basil
- 1 clove of garlic
- 50 g butter
- 400 g Italian peeled tomatoes (1 can)
- a splash of honey
- ¼ tsp ground chilli powder (to taste)
- 125 g mozzarella di buffalo (1 ball)
- salt & pepper (to taste)
- grated Parmesan (optional)
- saucepan (for the pasta)
- colander (for the pasta)
- frying pan
- Chop the fresh herbs, chop or press the clove of garlic and start softly frying in the butter in your frying pan.
- Add the peeled tomatoes … add some honey and the ground chilli powder & mix … and let it simmer … for about 10 min.
- Cut the mozzarella di buffalo in small cubes & set aside.
- In your saucepan bring water to a boil and add salt.
- Let the spaghetti cook according to the recommendation on the packet. Drain the spaghetti in the colander & add the spaghetti to the frying pan.
- Mix thoroughly and add salt & pepper to taste.
- Finally add the cubed mozzarella & mix once more.
- Serve at once.
- Optional: you may offer grated Parmesan extra.

- You may prepare the tomato sauce beforehand, but w/o adding the mozzarella, and store it in the fridge.
