What about cooking dinner – a light dinner – when you are short on time … Let’s rely on some basic food adding only some vegetables …
In my fridge a packet of tortellini was chilling: fresh tortellini filled w/ Parmesan & ricotta waiting for some pot with boiling water – ready in about 2 min.
What to add?
There are:
- fresh sage leaves from my windowsill & butter
- Italian bacon & spring oinions
- mushrooms
- freshly grated Parmesan.
I didn’t lose time & started some preparations:
- chopping the mushrooms
- chopping the bacon
- chopping the spring onions.
I filled a pot with water and started heating the water.
At the same time I fried the sage leaves (after a quick water shower) in butter for about 3-4 min. Next step was adding the spring onions and the bacon.
The sage leaves will be discarded after about 5 min. Afterwards the chopped mushroom march into the pan. Add some salt & pepper to taste. All will by frying until the mushrooms are well done (about another 5-6 min) – all will be ready after 15 min (I remember …).
In the meantime the water is ready for the tortellini i. e. boiling … The tortellini need about 2 min … Then they can be drained & and arranged on the plates.
The mushroom mess will accompany them … You may add some cream (2 tbsp or so) to the mushroom mess in the pan, mix it & then add it to the tortellini.
Also … anybody may add freshly grated Parmesan on top!

- 250 g tortellini filled with Parmesan & ricotta (ready for cooking)
- 6-8 leaves sage
- 10-20 g butter
- 40 g bacon (4 slices)
- 5-6 spring onions
- 150 g mushrooms
- salt & pepper (to taste)
- cream (optional)
- grated parmesan (optional)
- Chop the bacon, the mushrooms and the spring onions.
- Fry the sage leaves in butter for some minutes (3-4 min).
- Add the chopped bacon & the spring onions & mix (about 5 min).
- Discard the sage leaves.
- Add the chopped mushrooms, mix & fry for some minutes (about 5-6 min).
- Add salt & pepper to taste.
- Add some cream (2-3 tbsp) – if you like.
- Cook the tortellini (about 2 min in boiling water) & drain them. (Don't forget to start heating a pot filled with water when frying the vegetables!)
- Arrange the tortellini & the mushroom mess on 2 plates.
- Add generously freshly grated parmesan – if you like.
- Serve at once.
