simply fried noodles

ingredients:
  • 125 g Mie noodles (2 packets)
  • 30 g bacon (3 slices)
  • 1 red pepper
  • 1 red onion
  • 3 spring onions
  • 2 eggs
  • 2 tsp peanut oil (divided)
  • 1 tbsp ginger (finely chopped or grated)
  • 2 gloves of garlic (finely chopped or pressed)
  • 2-3 tbsp light soy sauce
  • 2-3 tbsp sweet hot chili sauce
  • 1 tbsp sesame oil (roasted)
  • 1 tsp five-spices-powder (levelled)
  • salt (to taste)
how to:
  • The Mie noodles: boil & simmer & drain & rinse with cold water. Pls read the instruction on the package about the times. Set the cooked noodles aside.
  • Chop the bacon, the red pepper & the red onion and set aside.
  • Chop finely the fresh garlic (or press it) & the fresh ginger (or grate it). Set aside.
  • Mix the light soy sauce, the sweet hot chili sauce & the roasted sesame oil; add the five-spices-powder. Set aside.
  • Whisk the eggs & fry the mess in peanut oil. Cut the baked eggs into stripes. Set aside.
  • In the same pan as the eggs fry the bacon, the garlic &the ginger for some minutes (3-4 min) in the rest of the peanut oil. Add the red pepper & the onion and fry for another 3-4 min.
  • Add the sauce mix, stir and add immediately the cooked noodles. Stir & fry for some minutes (4-5 min). Add the baked egg.
  • If you like you may increase the heat to get some crispy noodles.
  • Finalize with some salt and/or soy sauce.
  • Sprinkle the finely chopped spring onions on top.
  • Serve immediately.
Notes
Mie noodles: dried Asian noodles from wheat flour and eggs usually in form of packets (also: instant noodles)
Red onion: you may also work w/ white or yellow onions
Ginger: may be grated or finely chopped
Garlic: may be pressed or finely chopped
You may also ad some chili (crushed dried chili or chili powder) if you like it hot.
The fried noodles may be stored in the fridge if there are leftovers ... just reheat them in the microwave.
