pasta all’amatriciana – my way

What means all’ amatriciana? Wikipedia says it’s simply pasta w/ tomatoes, bacon & pecorino from the Italian town of Amatrice – made w/ spaghetti. My travel companion wrote that it’s one of the distinguished pasta dishes of Roman cuisine … made w/ bucatini. During our Rome adventure I had bucatini all’ amatriciana for dinner: it was delicious!Back home I decided to give it a try in my kitchen … (after consulting my cookbooks …) Starting…

next try: pumpkin soup

All started w/ a pumpkin, a superb Hokkaido. (As you might know by now Hokkaido is my favorite pumpkin – next comes butternut.) In my trusted food store I got a Hokkaido of 1600 g which resulted in 1350 g after trimming & scraping out the seeds & the soft mess. What to do w/ such a lot of pumpkin? So the basic creaminess of the pizza remained & the ricotta mingled w/ the…

white, red & green: some fish, some tomatoes, some spinach leaves

Dieser Beitrag enthält Werbung – adverstising. To start with:I found the basic recipe in Clotilde Dusoulier’s cookbook as an example for food of African origin that made its way into Paris when roaming recipes & cookbooks. In my freezer some fish fillets lounged around … & I didn’t want them the simple way i. e. to coat them w/ breadcrumbs before frying. (Nevertheless it’s a delicious way to serve fish fillets!) So I found this…

Dieser Beitrag enthält Werbung – advertising.   Xmas is finally coming – mightily. I always try to ignore the early – very early, far too early – signs of Xmas starting to appear about mid of September. It’s mainly in your trusted food store & other shops where suddenly there are shelves filled w/ Xmas cookies, gingerbread, Xmas chocolate, chocolate Santas, Advent calendars … I never can deal w/ this when it’s about 25° C…
