pasta all’amatriciana – my way

What means all’ amatriciana? Wikipedia says it’s simply pasta w/ tomatoes, bacon & pecorino from the Italian town of Amatrice – made w/ spaghetti. My travel companion wrote that it’s one of the distinguished pasta dishes of Roman cuisine … made w/ bucatini. During our Rome adventure I had bucatini all’ amatriciana for dinner: it was delicious!Back home I decided to give it a try in my kitchen … (after consulting my cookbooks …) Starting…

lasagna filled w/ vegetables

A crispy piece of lasagna: it’s comfort food from the best! If you like your lasagna less crispy just take it our of the oven some minutes earlier … The mozzarella will be really chewy, however, all is fine under the mozzarella i. e. inside the lasagna! Although we need quite a lot of ingredients it’s a surprisingly easy & fast pasta dish. Let’s start w/ the vegetables … 1st step: preheat the oven to…

next try: pumpkin soup

All started w/ a pumpkin, a superb Hokkaido. (As you might know by now Hokkaido is my favorite pumpkin – next comes butternut.) In my trusted food store I got a Hokkaido of 1600 g which resulted in 1350 g after trimming & scraping out the seeds & the soft mess. What to do w/ such a lot of pumpkin? (Maybe you think that the vegetables accompanied the chicken …) We all enjoyed the dinner …, however, some of the oven-baked vegetables remained on their plate afterwards…

Except of the lack of tomatoes the rest fits in a traditional pizza creation. The tomatoes – if like a tomato sauce or tomato pesto or fresh tomatoes?I simply substituted ricotta for tomatoes. So the basic creaminess of the pizza remained & the ricotta mingled w/ the…

white, red & green: some fish, some tomatoes, some spinach leaves

I found in the food blog universe a mix of vegetables & fish, adjusted the spices & decided to serve the mess w/ plain cooked rice. That was the idea (which worked out well!). The best mate to our mess of fish & vegetables will be plain cooked rice. If you happen to have some cooked rice in your fridge – fine. If not, just cook some rice along to preparing the mess. What do…

ham & beer & vegetables & gravy

Xmas is finally coming – mightily. I always try to ignore the early – very early, far too early – signs of Xmas starting to appear about mid of September. It’s mainly in your trusted food store & other shops where suddenly there are shelves filled w/ Xmas cookies, gingerbread, Xmas chocolate, chocolate Santas, Advent calendars … I never can deal w/ this when it’s about 25° C outside having a brilliant autumn day. Regardless…
