What means all’ amatriciana? Wikipedia says it’s simply pasta w/ tomatoes, bacon & pecorino from the Italian town of Amatrice – made w/ spaghetti. My travel companion wrote that it’s one of the distinguished pasta dishes of Roman cuisine … made w/ bucatini.
